
Grate 250g yellow courgettes on the large holes of a box grater. Place in a fine-mesh colander, sprinkle with 1/2 tsp salt and let drain over a bowl for 10 minutes. Squeeze out as much water as you can.
In a large mixing bowl, mix 500g chicken (or turkey) mince with 2 garlic cloves, finely grated, 1/2 cup breadcrumbs (or panko), 1 tsp oregano, 1/2 tsp chilli pepper flakes, 1/4 cup finely minced fresh herbs (parsley, mint, basil), the grated courgettes and 1 tsp salt. Mix well to combine.
Use a two-tablespoon scoop to shape the mixture into balls (around 20). Place on a lined baking sheet and either chill for 20 minutes or freeze (you can bake these from frozen; just add a couple of minutes to the baking time).
Drizzle with olive oil and bake in a 200c oven for around 20 minutes.
