Italian Seasoned Breadcrumbs

 

A great vegan alternative to parmesan for sprinkling over pasta, pane grattugiato is a southern Italian speciality.

Slice and cube a day-old rustic country loaf (8 to 10 slices). Spread onto a baking sheet, drizzle with a ¼ cup olive oil and season with 2 tsp dried oregano and sea salt. Bake in the oven at 120c for 20 minutes (or until completely dried out). Remove and let cool.

Transfer to a food processor and pulse until broken down to the size of coarse coffee grounds. Store in the fridge.

Use to sprinkle on pasta as an alternative, or in addition to parmesan.
