Tzatziki

Coarsely grate ½ large cucumber (peeled). Place in a strainer and let the juices drain out for an hour or two. Meanwhile, in a mortar and pestle place 1 garlic clove (peeled) with a little coarse salt and pound to a paste. Stir in 1 cup thick Greek yogurt, then the strained cucumber. Finally, add some finely chopped mint (a dozen leaves).

Serve with crudites and warm pita bread.
