Cranberry Syrup

In a small pot set over a low heat, stir together 1 cup sugar, 1 cup water and 2 cups fresh cranberries, roughly chopped (easier to do in a food processor).

Slowly simmer until the cranberries are soft (about 25 minutes).

Strain the mixture through a fine-mesh sieve, pressing on the cranberries to extract the liquid.

Let cool and refrigerate.

Makes a fine addition to a Cranberry Negroni or Cranberry Campari Spritz.
