
Grate a few radishes using a coarse grater and mix together with 75g unsalted softened butter* (or to your desired ratio of radish to butter). Scrape into a small/individual loaf pan lined with baking paper. Sprinkle with some flaked sea salt and refrigerate till cold.
Serve with some crusty sourdough bread.
* You could substitute with a block of plant-based butter.
