Swedish Rainbow Beet Salad

A plate of chopped beets in a creamy dressing.

In a mixing bowl whisk together 3 tbsp sour cream, 2 tbsp mayonnaise, 1 tbsp horseradish cream, the juice of 1 mandarin and half a lemon, 2 tbsp chopped fresh parsley, 1/2 tsp salt and a few grinds of pepper.

Fold in 500g beets (a mix of orange and pink), cooked, peeled and cut into bite-sized pieces.

Chill and serve.
