In a tall glass filled with ice mix together 25ml Campari, 25ml red vermouth, and 25ml pink grapefruit juice. Top with San Pellegrino sparkling water.
Variation: to make a Venetian Sunrise, swap in Bitter Bianco for the Campari and white vermouth for the red vermouth.
