Double Chocolate-Chip Cookies

Two double chocolate chip cookies

In a large mixing bowl cream together 1 cup/230g unsalted butter (softened) and 1 ½ cups/300g sugar. Mix in 2 eggs and 1 ½ tsp pure vanilla extract.

In a separate, smaller bowl mix together 2½ cups/310g flour, 1 tsp baking powder, ½ tsp bicarbonate of soda, 2 tbsp cocoa powder and ½ tsp salt. Mix into the wet ingredients till just combined.

Fold in 180g dark chocolate chips or chopped dark chocolate.

Use a small cookie scoop to form into flat-topped rounds and either refrigerate for 30 minutes or more, or freeze until needed (no need to defrost before baking).

Place on a baking sheet (give them a lot of room as they will flattern out).

Bake at 190C for 9 mins.

Lightly sprinkle with sea salt as soon as they come out of the oven.
