
In a mixing bowl combine 3 tbsp peanut butter, 3 tbsp rice wine vinegar, 1 tbsp soy sauce, 1 tbsp sesame oil, and the juice of half a lemon (around 2 tbsp). Set aside.
In a large salad bowl add 3 cups shredded cabbage (white or napa), 4 large carrots, grated, 6 large radishes, thinly sliced, 4 spring onions, thinly sliced.
Toss with the dressing. Top with 1 tsp sesame seeds and 1/4 cup chopped peanuts and mix again.
