Savoy Cabbage & Radicchio Slaw with Blood Orange Dressing

 

To make the dressing whisk together 90ml fresh blood orange juice, 2 tbsp rice vinegar, 1 tsp honey, 60ml olive oil, and 60ml mayonnaise. Season with salt and pepper. Refrigerate.

Thinly slice the light green centre of a savoy cabbage and a small radicchio head. Place in a salad bowl. Add 1 shallot, finely sliced and toss with some of the dressing (to taste).
