
In a large mixing bowl, mix together 450g white cabbage, finely sliced (approximately half a small head of cabbage), 3 spring onions, finely sliced, two tomatoes, diced, a bunch of parsley, finely chopped, and a handful mint, finely chopped.
To make the dressing, mix together 1 tbsp dried mint, 60ml olive oil, 45ml lemon juice, 1 garlic clove, finely grated, 1 tsp sumac, 1 tsp sugar, and 1 tbsp zaatar (optional).
Add to the salad and toss.
