
In a mixing bowl whisk together 1 tbsp olive oil, 2 tbsp maple syrup, ½ tsp salt, and ½ tsp smoked paprika.
Stir in 2 cups raw cashews.
Spread on a lined baking sheet and bake in the oven at 190c for 5 minutes. Flip over the cashews and put them back in the for another 5 minutes.
Turn down the heat to 120c and continue baking the cashews till they are almost dry to the touch.
Store in an airtight container once cooled.
