
In a bowl mix together 180g flour (1 1/3 cups), 1 tsp baking soda, and ½ tsp salt. Set aside.
In a food processor or mixing bowl, mix together 110g melted butter (½ cup), 100g light brown sugar (½ cup) and 100g granulated sugar (½ cup) until you reach a paste-like consistency (1-2 minutes).
Add 380g mashed bananas (3-4 or 1 ½ cups), 130g Greek yoghurt or sour cream (½ cup), 2 large eggs, and 1 tsp vanilla extract. Whisk till smooth.
Mix in the dry ingredients and fold in 100g mini chocolate chips.
Pour into a 9 x 5-inch loaf pan (lined with parchment paper) and bake for up to 1hr and 15 minutes (check after 1 hr) at 160c, until a toothpick comes out clean.
Let cool completely before removing from the pan.
