Yellow Courgette & Tomato Soup

 

Fry an onion (chopped) in some olive oil in a stock pot on medium heat until translucent. Add 2 yellow courgettes, chopped, and around 450g tomatoes (peeled and chopped). Cover with some vegetable stock, stir and cook on a simmer for around 20 minutes.

Pureé, and season to taste with salt and pepper.
