Cornbread Pudding

 

Note: can easily be made vegan.

In a large mixing bowl, mix 1 ½ cups (200g) cornmeal with 1/3 cup (90g) flour, 2 tbsp baking powder, and 1 tsp salt.

Mix in a 410g can of creamed corn, a 320g can of corn kernels (drained), 2 eggs and 115g butter/plant-based butter (melted).

Add ¼ cup spring onions (chopped), ½ cup (125ml) buttermilk (or plant-based alternative) and 1 cup cheddar cheese (grated). Mix to combine and pour into a sprayed casserole dish.

Sprinkle on an additional cup of cheddar cheese (grated) and bake in a preheated 200c for 35-40 minutes until brown on top.
