Cold Noodle Salad with Spicy Peanut Sauce

 

Make the spicy peanut sauce by combining the following ingredients (you can use an immersion blender/blender): 4 tbsp smooth peanut butter, 2 tbsp tamari or soy sauce, 2 tbsp rice wine vinegar, the juice of 1 lime, 1 tbsp grated ginger, 1 minced garlic clove, 1 tbsp sesame oil, 1 tbsp gochujang (or substitute with another chilli paste/sauce of choice) and 50 ml hot water. Blend until smooth and a bit runny (add more water as required) and set aside.

Slice up into batons a combination of crisp vegetables (red & yellow peppers, radishes, baby yellow courgettes) and place in a mixing bowl.

Add some cooked and cooled Asian noodles of choice to the vegetables, along with some of the dressing and mix well. Taste and add more sauce as required.

Sprinkle with sliced spring onion and some finely chopped peanuts before serving.

Will make enough sauce for 4-6 servings.
