
In a food processor, pulse together 175g flour, 1 tsp smoked paprika, and 100g butter (cold and diced) until you have a rough powder.
Add in half an egg, 30g grated pecorino or parmesan, 100g ricotta, 100g goat’s cheese, 50g grated cheddar, and 1 tsp salt. Process till the mixture comes together into a rough dough.
Divide in two, and roll each piece into a 20cm-long log. Brush all over with the other half of the egg. `Roll in grated parmesan (30g) and chill for an hour.
Slice each log into 10 discs and bake at 180c for around 13 minutes.
Serve with a glass of bubbly.
