Zucchini Bread

In a food mixer beat together 3 eggs, 180ml vegetable oil, 300g sugar (1 ½ cups) , and 1 tsp vanilla extract till light and thick.

Fold in 2 cups grated zucchini (skin on).

In a separate bowl mix together 300g flour (2 ½ cups), 2 tsp baking soda, 1 tsp baking powder, 1 tsp salt, 1 tsp cinnamon, and 1 tsp ground cloves.

Stir into the batter till well combined.

Pour into a greased loaf tin (approx 23 x 13 x 7.5cm).

Bake at 180c for around 1 hour and 15 minutes.

Let cool before removing from the pan.
