
Shred half a small white cabbage, 1 large carrot, and 2 spring onions in a food processor and place in a large bowl. Season with salt and set aside.
In a smaller bowl, mix together ¼ cup buttermilk (or substitute yogurt or sour cream), ¼ cup mayonnaise, 1-2 tbs cider vinegar, ½ tbs sugar, ¼ tsp salt.
Fold into the coleslaw. Serves 2.
