Buttermilk Pancakes

In a large bowl mix together 1 cup flour (140g), ¼ cup sugar (50g), ½ tsp baking powder, ¼ tsp baking soda, and ¼ tsp salt.

In a smaller bowl mix together 125ml/½ cup buttermilk (or substitute whole milk and add 1 tbsp sour cream or yoghurt), 1 large egg, and 1tbsp vegetable oil.

Stir the liquid mixture into the dry ingredients. Add a bit more buttermilk if too thick.

Fry in batches using a little vegetable oil set to medium-high heat.

Serve with butter and maple syrup.

Serves 2.
