
Take some stale baguette/country loaf (or even better, one that is completely dried out) and cut into bite-sized pieces. Rub with a cut garlic clove. Place in a salad bowl.
Cut up some juicy tomatoes into bite-sized pieces and add to the bowl, along with any juices which have run out onto the cutting board.
Drizzle with olive oil and balsamic vinegar and combine well.
Add some finely chopped spring onions or shallots, chopped radishes. Season with salt and pepper, and mix to combine. Mix in any liquid which has collected at the bottom of the bowl.
Add whole parsley leaves and basil leaves, and mix one final time before serving.
