Smørrebrød ‘Smushi’ Style

Gravadlax sandwich assembly: 

Step 1: Lay slices of a small rye bread (the carrot rye from Ole & Steen is excellent) on a large wooden board. You can also cut larger slices of rye bread in half.

Step 2: Spread each slice with unsalted butter, at room temperature.

Step 3: Top each with very thin slices of shallots or red onion.

Step 4: Top with a slice of beetroot gravadlax. Recipe here.

Step 5: Drizzle a little mustard sauce over the gravadlax. Recipe here.

Step 6: Garnish with a sprig of fresh dill.

Prawn sandwich assembly:

Step 1: lay slices of mini rye bread (the carrot rye from Ole & Steen is excellent) on a large wooden board. You can also cut larger slices of rye bread in half.

Step 2: Spread each slice with unsalted butter, at room temperature.

Step 3: Top each with a small lettuce leaf.

Step 4: Top with either a slice of hard-boiled egg or eggs mashed together with a little dill sauce. Recipe here.

Step 5: Top with small, cooked prawns

Step 6: Drizzle a little dill sauce over the prawns. Recipe here.

Step 7: Garnish with a sprig of fresh dill.

Serve with a Scandinavian potato salad. Recip here.
