Creamy Chocolate Sorbet

– A dairy-free treat requiring few ingredients and little time to assemble.

In a saucepan whisk together 375ml water with 200g sugar, 75g unsweetened cocoa powder and a pinch of salt. Slowly bring to a boil whisking frequently. Once at boiling point continue stirring for a final 45 seconds.

Remove from the heat and stir in 170g bittersweet chocolate, finely chopped. Whisk till melted and well-incorporated. Whisk in a ½ tsp vanilla extract and 180ml water.

Chill thoroughly before placing in an ice cream maker and freezing according to instructions.

Serves 4-6.
