
– A quick and easy recipe for nibbles for your countdown to NYE. Goes great with sparkling wine or champagne as an apéritif.
In a mixing bowl place a 100g mixture of three cheeses (grated emmental, fresh goat’s cheese and herbed cream cheese – or other preferred cheeses). Season with black pepper and dried thyme.
Lay a rectangular sheet of store-bought flaky pastry (approx. 35cm x 23cm) on a lightly floured surface and cut into four equal rectangles.
Using a thin metal spatula spread the cheese across the four rectangles, leaving a 1cm border along one side of the longer length of each piece. Sprinkle with finely chopped, roasted hazelnuts.
Run a wet finger along each of the ungarnished borders and then roll each piece lengthwise, ending with the border. Ensure a good seal, and place in the refrigerator or freezer for 15 minutes to firm up.
Cut into 1cm thick pieces, lay them on their sides on a baking sheet and bake in a 180c oven till golden (around 15 minutes).
Note: You may freeze some of the unbaked pinwheels for future use and then pop them in the oven straight from the freezer.
