
Party season is upon us. Time to bring out the pretty one-bite appetisers.
Take two large, ripe avocados, peel and pit them, and place in a food processor along with the juice of 1 lime, a drizzle of olive oil, a smidgen of chilli powder and a good pinch of salt. Purée till smooth.
Fill pre-baked savoury shells (I buy mine at Marks & Spencers or use mini-oatcakes or similar) with the guacamole mixture, top with a dollop of sour cream or crème fraiche, and garnish with a sliver of spring onion.
Goes great with a margarita.
