Sloe Gin

Pick around 500g of sloe berries (ideal picking time is around mid-October). Place in a bag in the freezer overnight.

Divide between two (airtight) jars. Pour over 125g granulated sugar in each jar (250g sugar in total). Pour over 500ml of gin (I like Gordon’s) in each jar (1L gin in total).

Seal shut, and shake gently a couple times of day till the sugar has dissolved.

Place in a cool, dark cupboard and ignore for a minimum of 3 months. But the longer you leave it, the better it will be! 

Strain through a muslin, taste and if not sweet enough you can top it off with a sugar syrup (equal parts sugar dissolved in water).
