
Just in time for apple season, a simple, but delicious dessert.
Roll out a round, puff pastry dough (store-bought is fine) and carefully place flat on a non-stick oven pan. Prick the dough all over with a fork. Next, using the tongs of the fork press around the edges of the dough to leave a 2cm margin (crust).
Baste the dough (excluding the edge) with some melted jam (apricot is good).
Take (approx.) 6 medium-sized apples, peel, core and then slice thinly, placing these on the dough in overlapping, concentric circles. Sprinkle with a few drops of milk, followed by some granulated sugar, and finally some cinnamon. Baste the edge with egg yolk.
Place in a 180c oven for around 25 minutes, till the apples start to crisp.
Remove from the oven, and immediately baste the warm apples with more melted apricot jam.
