Boudin Blanc & Apple Bites

Slice up three boudin blanc sausages into slices and fry in a pan with a little rapeseed oil till golden on both sides. Remove from the pan and place in a baking dish large enough to hold all the slices in one layer.

In the same pan, add bite-sized slices of apple (core a large apple all the way through, cut into thick rounds and cut each slice into 8 pieces.) and a large knob of butter. Scrape up the bits and fry the apples till lightly golden.

Place a slice of apple on each piece of sausage.

To serve, heat through in the oven before serving with toothpicks.
