In each of 4 champagne glasses place 2 tbs peach purée* and a swig of créme de cassis. Top with rosé Prosecco and stir before serving.

* Peel, stone and purée 4 ripe peaches in a blender till smooth. Keep some portions ready in the freezer to tide you over winter.
