Grilled Lobster Tails

In a small bowl place 4 tbs butter and 2 garlic cloves, peeled and finely chopped. Zap in the microwave till melted (around 30 seconds). Add the juice of ½ lemon.

Bring a grill pan up to a medium-high heat.

In the meantime, place two lobster tails (raw) on a chopping board, the flesh facing up. Using a large knife or cleaver, slice the tails in half lengthwise. Baste with the butter mixture, and season with sea salt and pepper.

Immediately place on the hot pan, flesh side down. Grill till lightly charred, around 3-4 minutes. Baste again, and flip over to the other side. Continue cooking till the skin has turned a bright (lobster) red, and the meat is opaque (another 3-4 minutes).

Remove from the pan, and serve with the remaining butter.

Serves 2.
