Panzanella

Take a couple slices of crusty Italian bread (somewhat stale is better) and grill or toast till golden. Rub with a cut clove of garlic, tear into bite-sized pieces, drizzle with a little olive oil and set aside.

In a large shallow bowl add the following: 1 small cucumber (peeled and chopped), 3 tomatoes (very ripe) chopped, 5 radishes, sliced, a small handful of black olives, pitted and sliced, 1 small shallot, peeled and sliced thinly, and some freshly chopped herbs (chives, basil, mint).

Dress the salad with olive oil and red wine vinegar. Season with sea salt and pepper. Add the pieces of bread and mix well. 

Set aside for a good 10 minutes before serving.

Serves 2.
