
Grill 4 slices of an Italian loaf (Pugliese or ciabatta). Rub one side of each slice with a cut clove of garlic. Drizzle with a little olive oil. Tear up one buffalo mozzarella ball and distribute it between the four slices.
On two of the slices grate over some lemon zest, and sprinkle with finely chopped red chilli. On the other two slices, distribute slivers of grilled red pepper (from a jar is fine).
Finish off with a sprinkling of sea salt, freshly ground pepper and a final drizzle of olive oil.
