
Cut up the flesh of a small watermelon into chunks, liquidise in batches in a blender along with around 20 mint leaves, and then pass through a fine sieve. This should make around 2 litres of watermelon. Place in a large pitcher and refrigerate.
When ready to serve place the watermelon juice, the juice of 4 limes, 700ml vodka (ideally from the freezer), 200ml Mandarinetto (Italian mandarin liqueur) and sugar syrup to taste into a punch bowl.
Serve straight up or in a tumbler along with some ice cubes.
Makes around 20 cocktails.
