
Peel a medium-sized cucumber and cut into small cubes. Place in a bowl, sprinkle with a little sea salt and set aside.
Crush a large garlic clove with a little sea salt using a mortar & pestle. Stir in ½ cup finely chopped dill and mint and 1 cup Greek yogurt. Add the cucumber (draining away any accumulated juice) and stir.
Serve with warm pita bread and grilled lamb skewers.
